Chocolate Chip Cherry Blondies

Last post I brought you a delicious but nutritious, healthful cherry breakfast recipe. This post I am bringing you an over the top, super indulgent, not-even-a-little-bit-healthy cherry dessert recipe!

If you’re not drooling over the pictures, there’s probably something wrong with you. Big juicy cherries, warm melty chocolate chip and gooey blondie batter? Uhm, yes please. Needless to say, these did not last long and were the cause of several sugar induced comas.

So worth it.

Chocolate Chip Cherry Blondies

(from Averie Cooks)

  • 1/2 cup butter, melted (1 stick)
  • 1 cup light brown sugar, packed
  • 1 large egg, lightly beaten
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt, optional
  • 3/4 to 1 cup semi-sweet chocolate chips
  • 1 cup cherries, quartered

Preheat oven to 350 degrees. Line an 8-inch square pan with aluminum foil and spray with cooking spray.

In a medium microwave-safe bowl, melt the butter. Add the brown sugar and stir to combine. Add the egg and vanilla, and stir to combine. Add the flour and salt, and stir until just combined. Fold in the chocolate chips and cherries. Smooth batter into prepared pan.

Bake 30-35 minutes, or until center is set and top is golden.

Let cool at least 1 hour before slicing.

I might finally be sick of cherries. Is that even possible? I ended up freezing a bunch since I couldn’t use them all up in time. So the cherries will most definitely be back! I’m thinking pie… send me some good Martha Stewarty thoughts, please!

      So yummy!! Thanks for the inspiration! I was looking at your clafoutis too… might try it with some of the cherries I froze!
