Happy almost St. Patrick’s Day!
I’m in my new kitchen and cooking up a storm. I’ve got an all new (and delicious) recipe coming very soon (and of course my Oahu adventures), but in the meantime, in honor of the holiday, I thought I would round up my most festive dishes!
Corned Beef and Cabbage – It’s a classic and a must-make. We love corned beef in this house, so I’m not sure why we don’t make it year round. I guess it’s more special and fun when it only comes out once a year!
Corned Beef Reubens – The two of us can’t eat a whole corned beef, so we always have leftovers. These tasty sandwiches are the perfect way to use them up!
Hot Reuben Dip – If you’re looking for something a little more adventurous to do with your leftovers, check out this dip! I’ve made it for the past two Superbowls, but it’s definitely appropriate for St. Patty’s too!
Irish Carbomb Cupcakes – These cupcakes include three of Ireland’s favorite types of booze. A chocolate Guinness cupcake, filled with chocolate whiskey ganache, and topped with Bailey’s Irish Cream buttercream. Seriously.
Bailey’s Chocolate Cookies – In keeping with the boozy theme. These cookies are less work than the cupcakes, but just as tasty!
Mint Chip Cookies – Because it’s just not St. Patty’s without a little green. You can make these cookies any time of year without the food coloring… but where’s the fun in that?
Easy Grasshopper Bars – More green! These brownies include three decadent layers of chocolate and mint. Yum.
Homemade Shamrock Shakes – Last but not least, a copycat of McDonald’s favorite seasonal treat!
