Apple, Bacon & Gouda Pizza

If you loved my Fall Harvest Pizza as much as I did, here’s another great seasonal pie!

Every time I make pizza at home I’m reminded how freaking delicious it is. Probably one of my favorite foods, and so versatile! You could pretty much put anything on a pizza and it would taste good. Including apples! Who woulda thought?

Apple, Bacon & Gouda Pizza

(adapted from How Sweet It Is)

  • 1/2 batch homemade pizza dough, or one pre-made pizza dough
  • 1/4 teaspoon nutmeg
  • 1/2 tsp dried rubbed sage
  • 1 tablespoon olive oil
  • 1 large apple, very thinly sliced
  • 5 slices thick-cut bacon, cut into squares
  • 1 small onion, sliced
  • 1 cup freshly grated Gouda cheese
  • 1/4 cup freshly grated Parmesan cheese

Preheat oven to 375 degrees.

Heat a skillet over medium heat and add 1/2 tablespoon olive oil. Add the onions and cook about 20 minutes, stirring occasionally, until caramelized. Meanwhile, cook the bacon in another skillet until crisp, drain on paper towels and set aside.

Pre-bake the pizza dough about 10 minutes. Remove from the oven and brush with remaining olive oil. Sprinkle with the nutmeg and sage. Sprinkle about 1/4 cup of the Gouda on the pizza. Place a layer of apples on the cheese, then add the onions. Add the remaining cheeses evenly over top, then finish with bacon and another layer of apples.

Bake for 25-30 minutes, or until cheese is golden brown and bubbly. Finish with an extra sprinkle of Parmesan before serving.

This pizza was amazing. Of course I loved the sweet and salty combo, and the nutmeg and sage added the perfect spice. Gouda is Nick’s favorite, so it was a nice twist on the usual mozzarella. Definitely another winner!
