Bacon Peanut Butter Pupcakes

This weekend wasn’t  just Cinco de Mayo… It was also a very special holiday in our house. Kaiser’s birthday!

Kaiser turned 3 on Saturday. He has come a long way from the 6 month old pup who destroyed Playstation controllers, peed on everything, and ate my favorite shoes! Kaiser’s already lived in 3 different states and visited many others. He’s quite the worldly pup. Though Kaiser likes being a military brat, he misses all the friends he’s left behind. Especially Gordita, Harvey and Duke!

Since Kaiser’s Dad looooves to spoil him, we had to have a birthday party for him.

Kaiser got to have his best friend Deke over.

He got to try some beer (he is 21 in dog years, after all).

And he got to finish off the night with some pupcakes! No birthday party would be complete without cake.

Deke got to have a pupcake, too.

I think they liked them.

Bacon Peanut Butter Pupcakes

(adapted from Just a Pinch)

make 6 pupcakes

  • 1 cup whole wheat flour
  • 1/2 cup skim milk
  • 2 tbsp honey
  • 1/3 cup peanut butter, plus more for frosting
  • 2 tbsp canola oil
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 egg
  • 2 strips bacon, cooked and crumbled

Preheat oven to 350 degrees. In a large bowl, combine ingredients from flour through egg, and beat with a mixer until combined. Fold in bacon crumbles. Spoon into 6 muffin cups (sprayed or lined with cupcake wrappers).

Bake 18 minutes, until tops are golden and a toothpick inserted into the center comes out clean.

Let the cakes cool, then frost with peanut butter (you could also use cream cheese). Decorate with more bacon or dog biscuits!

I wouldn’t recommend feeding these to people. Without much sugar, they probably don’t taste much like cupcakes.

But dog’s love ’em!

Kaiser had a great birthday, and can’t wait til next year.

    I made this recipe for me dog’s birthday, and she and her doggie friends loved it! We still have some leftovers, so she will be able to finish it tomorrow! Thanks for this great recipe!
