S’mores Brownies

Nick finally started class last week. Now that we’re both busy bees and out of the house a lot more, finding time to cook is becoming more challenging. I’m always up for a challenge, though! This weekend Nick had his new classmates over. We kept it simple with burgers and my Asiany coleslaw, but I decided to go creative with dessert.

Ever since we roasted marshmallows on our neighbors’ fire pit a week ago, I’ve had s’mores on the brain. S’mores brownies? Why not!?

S’mores Brownies

  • 1 package brownie mix, prepared
  • 1.5 sleeves graham crackers
  • 2.5 cups mini marshmallows
  • 1 cup chocolate chips

Preheat oven to 350 degrees. Line a 9 x 13 pan with tin foil, then spray with nonstick spray. Line the bottom of the pan completely with graham crackers. A little overlap is ok.

Prepare brownie mix per box instructions. Pour brownie mix over graham crackers and spread evenly.

Bake the brownies 25 minutes. They should still be pretty wet in the middle. Pull them out of the over and sprinkle marshmallows and chocolate chips over top. I didn’t have mini marshmallows, so I cut regular ones in fourths… it worked, but was a huge sticky pain the butt!

Put the brownies back in the oven and bake about 10-15 more minutes, until the marshmallows are golden and the brownies don’t jiggle at all. Stick crumbled graham crackers into the marshmallow while it’s still warm.

Use the tinfoil to pull the brownies out of the pan. COOL COMPLETELY BEFORE CUTTING! I didn’t do this, and they were quite difficult to cut. I’m pretty sure they’d be a lot easier to cut when cool, but if the marshmallow is still sticky, spray your knife with nonstick spray. If the knife gets too sticky, clean it off and start fresh.

Uhmm… oh my gosh. These are, admittedly, terrible for you. But PLEASE, do not deprive yourself. So worth it. I thought these were going to be a dud after I had such a hard time cutting them (and I reiterate, do not cut them until they’re cooled!), but the 6 guys I fed them to seemed to be drooling over them, and were picking up seconds and thirds. Which is good thing, for my jeans’ sake, since only a few remain. I do have half a box of graham crackers left, though…
